
Kevin Cabrera has been baking for 24 years. Starting out with his wife Kay in Hilo at Kay’s Creations. He has spent the last 19 years developing his skills as a bread baker in most of the hotels on the Kohala Coast, eventually becoming Baker Chef at the Mauna Kea Beach Hotel where he serviced the Hapuna Beach Prince, the Mauna Kea Beach Hotel, and Aloha and United Airlines, providing diverse products for their varied needs for nine years. Last year he left his position as the Baker Chef at the Fairmont Orchid, where he had developed a superior bread program for their high volume outlets and banquet services, to pursue his love of baking on a different level.
With his wife Kay he attended the first Kneading Conference in Maine in 2007, where he was able to bake in a dome shaped wood-fired masonry oven he had been researching on-line. It’s even heat and high temperature made bread baking a celebration of the craft. He ordered and built one on a trailer with the help of friends and supporters, so it could go to farmer’s markets, schools or private parties etc. The oven has become the centerpiece for his current enterprise “ The Sandwich Isle Bread Company”
He had mentored several bakers and has taught seminars on bread for the University of Hawaii.
